    In the last couple reviews I have been eating at restaurants located in some of the most popular hotels on the Las Vegas strip.  This review is no different in that respect but unlike the earlier reviews Fusia is actually a decent restaurant.

    Fusia serves a mix of Chinese, Thai, and Japanese dishes without the American style influence but with a focus on execution.  You won't be getting stryoform boxes of chow mein here.

    Mongolian Style Wok Beef - Dried Thai Chile, Bell Pepper and Egg Noodles:

    A little on the salty side so it mixes well with rice.  Noodles were on the harder side so at least it wasn't overcooked.  Vegetables were crunchy and fresh.  The beef was not the standard Chinese restaurant fare and resembled sirlion quality beef.  Priced around $21, it is a very high price for noodles and beef.

    Sashimi special:

    Fishes were fresh but for aorund $21 it's, again, a high price.

    White Miso Lacquered Sea Bass - Stir-Fry Vegetable and Soba Noodle Spring Roll Sambal Aioli:

    At $31 this is the most expensive meal we order but also the most special and best tasting.  The stir-fry spring rolls here can stand their own as an appetizer with its light crispy outside and it's hot extremely filled inside.  This spring roll isn't just bean sprouts, it has a variety of vegetables like bell peppers, red peppers, green peppers, and onion.  The main item of the dish, the sea bass, needs a space of it's own below.

    Sea Bass in detail:

    With a texture so soft you'd think the sea bass wasn't cooked long enough.  Each bite is juicy and tender with a texture reminisent of lightly cooked vancouver crab meat.  This dish is the only you have to try when you're at Fusia for dinner.

    With it's $20+ USD price of all dinner entree dishes, Fusia is pricy but that has become expected in a Las Vegas hotel restaurant.  Most of the dishes are worth it's entry price but some specials like the White Miso Lacquered Sea Bass is definitely worth every bite.  All our dishes were of high quality but some are better than others so I recommend trying items on the menu that are special to Fusia that you can't get anywhere else.
