The existing trend is to eat healthy and restaurants are picking that up by introducing various salads, fruits, and less oily dishes to their menu.  Some restaurants start with heath in mind and keep fried items out of their menus like Quizno's or Subways.  A relatively new franchise growing in the United States is Which Wich:

An exposed restaurant with its clear windows:

    Ordering booth:

On the left, you choose a bag based on the type of meat you want in your sandwich.  On the bag are various checkboxes allowing you to select type of mustard (honey, dijon, etc.), vegetables, spreads (BBQ, Buffalo, etc.), oils, and some other extras like bacon.  Remember to write your name on the bag to identify your sandwich from others.

    Seating area:

The yellow symbols are the icon for the company but they look very tacky.

    Chicken Cordon Blue:

Very healthy but not very filling for $7 USD.  Everything inside the sandwich was fresh so it tasted great.  Even though it doesn't look like it should take a long time to prepare, it takes the staff a long time to prepare and sandwiches usually come out cool.  I prefer hot foods and this wasn't too hot so I felt a bit let down.

If you like to customize your sandwich then Which Wich is worth a try.  It's a light meal that doesn't leave you aching with fatty oils.  I wasn't fulfilled so I followed up with a McDonald's Southwestern Chicken sandwich.  That left me aching with fatty oils.  One thing that happened both times I came here is the staff messing up sandwich orders.  Although you write your name on the bag to identify your sandwich, the staff frequently mistakens the sandwich between each other and puts them in the wrong bag.  They should definitely stick to the assembly line structure as they do for Subways and not try to multitask.  Another is that the staff usually has problems reading names out loud so people accidently grab the wrong bags.

With the slow sandwich preparation and messed up orders, it's hard to recommend this place as a daily thing.  It's worth a visit though.
